Hey-Ooo New Muffin Recipe Yo!!

OH MY GOSH GUYS!!

I’m sorry Justin Beiber fans out there, I couldn’t resist this hilarity.

All I can say is that my tastebuds are in utter shock right now.

These are my ULTIMATE new favorite snack. For realz my friends.

It incorporates my favorite things:

1. Pumpkin

2. Hi Lo cereal

3. Protein

4. Pumpkin :P

I adapted the recipe from THIs–using pumpkin instead of banana since I didn’t have any. I DO wanna try banana in the future though!

SO. FREAKIN. GOOD. (and easy peasy)

~HI-LO PUMPKIN MUFFINS~

Ingredients:
2 cups Hi Lo cereal (or another cereal)
2/3 cup milk (regular, soy, almond, rice etc)
1 and 1/3 cup flour (I used soy flour)
1 tbsp baking powder
1/2 tsp salt
1/4 tsp baking soda
1/4 cup honey (or agave nectar)
1 and 1/2 cups mashed banana pumpkin
2 egg whites
3 tbsp canola oil (I used peanut oil for more flavor)
1 tsp vanilla

Instructions:
1. Preheat oven to 400*F
2. Combine all dry in a bowl, but leave 1/4 cup of the cereal set aside
3. Stir in wet ingredients until smooth and thick batter
4. Pour gloop into a nonstick muffin tin
5. Crush remaining 1/4 cup of cereal and sprinkle over mixture in each muffin cup
6. Bake for 20-25 minutes or until brown
7. Yields 12 protein, pumpkin-rich muffins

Your tastebuds can thank me later! 8) I really want to try it with Fiber One cereal too! I bet it’d taste marvelous.

    I have baked with Fiber One before. It was aiight.
    Now, cookies with potato chips in them, that’s a different story.

    I love protein muffins! I love all muffins honestly, but I like being able to eat them and call it the protein part of my meal. Plus they taste so good! I have baked with cereal before, but I really want to get my hands on that hi lo cereal because I also love calling cereal the protein portion of my meal!

    If we’re going based on looks, I want to have a meal with Adam Levine! I love him.

  3. was the cereal crunchy in the muffins? i’ve baked with fiber one before (hungry girl website recipes) and i’ve had a lot of success. it’s especially good as a “bread” coating for chicken!

  5. Uhmmmm baking with cereal!? I’ve never tried it. I have made muddy buddies and rice crispie treats but that’s as far as my cereal expertise in baking goes. I think I eat it all before I can even think about baking with it :)
    These muffins DID inspire me to make pumpkin oatmeal tonight though. And they were absolutely delicious!

  6. I’ve never baked with cereal, it sounds like a good idea though. I totally miss baking and being creative in the kitchen – maybe when things settle down in uni a bit more.

    I can’t think of a celebrity I’d want to have lunch with off the top of my head, but I agree that Hugh is embodiment of eye candy ;)

  9. These muffins look awesome! I would love to dine with Jillian Michaels. Even though she is crazy with her workouts, I think she’d be great company. I’ve been listening to her podcasts lately and she cracks me up- she would be a blast! And for what it’s worth, I’m sure she’d kick my booty beforehand and work up a major appetite, and let’s be honest hunger=best sauce ever!
